This is more than just easy….it’s really more like ghetto style Chick-Fil-A…but my picky family chomped it up and told me I was great…so it now in my rotation.
Just in case your families taste buds are pedestrian as mine…here’s how I threw this new family favorite together in about thirty minutes on a night that I thought we were going to be eating ramen noodles for dinner because there was nothing else left in the house.
Before I give you the ingredients, let me reiterate that this is ghetto…but its GOOOOOD.

You Need:
1 can grands style biscuits
chicken breast
extra crunchy (wait for it) shake n bake type product
That’s it. I told you it was ghetto. But I am so not above going ghetto to get the kids fed.
I cut the chicken with my kitchen scissors (seriously if you don’t have a pair of scissor designated for food only you are selling yourself short) to biscuit size…doused them heavily in the shake and bake and cooked according to package directions.
I put the biscuits in the oven for the last 13 minutes of the chicken time so they would done at the same time and viola!

So I had ONE free minute the other day and I was browsing other mom blogs…or stumbling across them on Pinterest…whatever..I was wasting time ok?
I came across this cool chick and her weight loss story and was inspired by her success. And also impressed with her bravery..she’s got before and afters all over her blog! That’s my kinda girl!
Anywoo..she had this simple and fantastic recipe for a Sugar Free Gluten Free Breakfast Cookie and I had to try it. The boy will NEVER eat breakfast. It didn’t matter before he started kindergarten this year because we would just eat when ever he was ready. I was just living in his world then. But now he has to leave the house before the sun comes up to get to school on time and (much like his father) he is just not a morning kid.
I’m always trying to get something down his throat before he runs out the door but it rarely works…unless of course I want to feed him PopTarts or donuts every morning …which I have thought about …..but decided that is just a cruel thing to do his health and to his teacher.
He has an early snack at school so it’s not usually an issue, but last week he had to be picked up after only an hour at school because he threw up in the hallway. Amoxicillin on a empty stomach apparently isn’t a good idea. So I am renewed in my quest to find something he will eat in the morning. When I found this recipe I made it right away. He didn’t eat it of course….natch. But I did..and they rocked.
(You may notice in my picture that is sprinkling of chocolate chips on each of my cookies. Another cheap trick to try to suck the boy into breakfast.)

Sugar Free Gluten Free Breakfast Cookies
You need:
1.5 cups of oats
2 ripe bananas
1 cup unsweetened applesauce
raisins to taste
cinnamon
Mix it all up…divide into 12 cookies and bake at 350 for 35 minutes.
If you are a points counter they are 1 pt each!

This is one of my very favorite breakfast recipes. It feels so bad..but it’s atually good.
French Toast is pretty much an indulgence for most of us. You know…one of the few things you only eat on vacation bsecause c alories don’t count on vacation, right?
But this version you can everyday if you want. And if you’ve got the timo to crack a few eggs.

Whole Grain French Toast
2 slices whole GRAIN bread..not whole wheat….most whole wheat shelf stable breads are as bad as white bread
1 egg beaten
Cinnamon and sugar / substitute to taste
1 tbsp coconut oil (or any other oil/fat to cook in)
Mix the cinnamon and sweetner with the egg. I usually don’t use any sweetner at all..but this is the time to add it)
Toast the bread..dip in egg mixture and cook a few minutes on each side.
Viola! Dust with powdered sugar..top with organic honey or maple syrup and you have a super charged healthy breakfast that tastes like vacation but is really a flat belly food.
I”m sure I’ve posted a Banana Bread recipe before, but there is no way it was easier and more delicious than this one. Seriously…I whipped it up at 7:30 this morning and it literally was done and we were eating it for breakfast by 8:15!
You Need:
3 ripe or overripe bananas
1 c. sugar
1 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 egg
1/4 c. melted butter
Just mix the dry ingredients in one bowl, eggs-butter and banana in another bowl and then combine all ingredients. Spray a mini-loaf pan with spray oil, pour in the batter and bake at 325 for 30 minutes.
No mixer needed, just mash the bananas with a fork. You can add one cup of chopped nuts if you like.
Easy peasy lemony squeeezy!!!!

This is one of my FAVORITE sneaky mom tricks and one of my favorite Mom on the Go Meals. A super Easy Green Smoothie will fill you up and wake you up with no caffeine crash and without feeling bloated from eating a huge meaty breakfast.

You might remember the scandal a few years ago surrounding Jessica Seinfelds (Jerry’s wife) cookbook Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good Food. The chick that wrote The Sneaky Chef: Simple Strategies for Hiding Healthy Foods in Kids Favorite Meals claimed that Jessica totally ripped her off. Both of the books are fantastic if you have about 4 extra hours a week to puree vegetables and sneak them into your kids food.
Seriously, unless you have alot of extra time don’t bother buying either of these. This was the one recipe that I took away from Jessica’s book and made it my own. And I also make it for the boy all the time. As long as your kids don’t see you actually put the spinach in..THEY WILL NEVER KNOW it’s in there. The banana cuts the spinach taste and the blueberries turn the whole smoothie a lovely shade of purple.

Easy Green Smoothie Recipe
1 big handful spinach
1 banana
1/2 cup frozen blueberries
1 cup water
1 cup ice cubes
1 scoop Whey Protein Powder
Mix, drink and feel great. This is such an energizing breakfast and a great afternoon pick-me up that it makes me want to want dabble more into raw foods. The rest of my family will never go there of course, and I don’t think I would ever want to completely give up cooked food, but you really can feel the difference when you eat a lot of raw veggies and fruit. This is my most absolute and best best favorite recipe for breakfast on the go. I am a big believer in eating breakfast. Not a huge breakfast, and it has to be healthy, light, filling and energizing. A tall order. It’s easy to have a great breaky at home but when you are a super busy (super) mom you rarely have time to coerce your picky kids into eating at least half of a frozen waffle before they leave for school much less make your self a decent meal.
So instead of eating a processed sugary granola bar or a sugar filled bowl of cereal make these Turkey Breakfast Muffins Sunday night and pop one in the micro every morning for about 40 seconds and you have a perfectly portable completely balanced and DELICIOUS breakfast.

Turkey Breakfast Muffins
Ingredients:
1 pound ground turkey sausage ****
1 egg
1 cup flour
1 cup whole wheat flour
2 tsp baking powder
Italian Seasoning to taste
1 tsp baking soda
1/4 cup sunflower seeds
1 cup milk
2 tbsp oil

And then you:
Mix all the dry ingredients together in one bowl. Crack the egg and mix well.
Add egg to ground turkey then combine turkey to flour mixture. Mix in sunflower seeds
Pour batter into 12 muffin tins.
Bake at 400 degrees for 20-25 minutes
****I have only ever made this recipe with precooked turkey sausage. The kind that only has to be heated in the microwave so if you are using raw ground turkey your cooking time may be longer. Or you could precook the ground turkey which is probably the best idea.
:sidenote: I use two cups of whole wheat flour because I prefer the taste and I also used water instead of milk. For the oil I used two tbsps of spray olive oil.
If you make it they way I did the nutritional info per muffin is:
154 calories
15 grams carbs
8 grams protein
7 grams fat
Sorry I don’t have a picture for this one because I haven’t made it in a while. I was going to whip up a batch this morning but ground flaxseed isn’t something I keep on hand unless I plan to make these. Although I should because the benefits to adding flaxseed to your diet are awesome.
:sidenote: I’ve made these numerous times and NEVER added the psyllium husks. It just sounds too ….yuk.
:sidenote: I never could find “ground flaxseed” and I definitely do not have time to grind my own…so I use Flaxseed Meal which is readily available in any grocery store now. Check the organic aisle.
Flax Meal Pancake Recipe
2 eggs
3 tablespoons ground flaxseed
1 tablespoon psyllium husks
1/8 teaspoon salt
2 packets splenda
1 teaspoon baking powder
dash vanilla
Stir until combined, let sit a couple minutes to thicken
You can add a couple teaspoons of water if it’s too thick
Pour into spray oiled pan and brown on both sides.
Makes 2 big pancakes.
Stay in Phase One by serve with sugar free pancake syrup or add fresh fruit if you are in Phase Two.
I am so sick of eggs for breakfast lately. Cheese eggs, salsa eggs…cheese and tortilla roll ups. I can’t take it anymore. So I’m going to whip up a big batch of these South Beach Diet Phase Two friendly pancakes tonight to heat up for the next few mornings. They are great with a little sugar free syrup or if you are feeling froggy, roll up a turkey sausage link in one.
Great on the go mom breakfast.

You Need:
4 egg whites
1/4 cup low fat cottage cheese
1/2 cup old fashioned oatmeal
1 tsp vanilla extract
nutmeg to taste
Blend all the ingredients in a blender or food processor and then cook in pan as you would regular pancakes
I usually make a double or triple batch and freeze 2-4 servings in sandwhich bags..then just grab in the am.
I bought this on a whim at Target one day while out wasting time with the boy. He loves things that are ‘boy sized’ and I thought it might come in handy one day so we bought it.

I’ll skip the meltdown that came after he realized this was to stay in the kitchen and not for his playroom.
I bet I use this tiny pan at least three times a week, maybe more. For some reason the absolute only breakfast the hubs will eat is a Egg and Cheese English Muffin. Actually that’s not true. He will eat loads of bacon and sausage too, but I don’t do breakfast meats.
So this little $5 pan has more than paid for itself. I am a McMuffin makin’ fool with this pan.
I usually make His and Hers McMuffins. His is whole egg with real cheese melted on top…mine is 3 egg whites usually with no cheese.

I won’t bore you with a recipe on how to throw together an Egg and Cheese English Muffin...but I will tell you if you put the cheese on top of the egg while it’s still in the pan it gets just the right amount of melty-ness. Yum.
As usual, this may be a meal that only I love. But then again, maybe you are like me and feel like you need something carby or crunchy with your eggs in the morning.
If it were a perfect world I would be able to eat big, fat crumble-top muffins, french toast, or fluffy pancakes for breakfast every day. Or at the very least, cheese eggs with biscuits soaked with honey. But it’s not. And I still have about five pounds of baby weight to lose, so here’s what I had for breaky this morning.
6 egg white frittata – sweet red pepper – turkey pepperoni chips

Yum. Actually it is pretty good. I learned the turkey pepperoni chip trick years ago when I tried South Beach for the first time from another South Beacher. It really works when you need something crunchy. 45 seconds to 1 minute in the microwave and you have a perfect chip/cracker substitute.
So while I wanted to nosh on a huge plate of doughy biscuits, I had this 210 calorie breakfast instead and felt satisfied and energized.
