It’s been a while since I posted an actual recipe…so least you think I don’t cook anymore…please enjoy the following super easy, from scratch Blueberry Muffin Recipe.
I gave the boy the option of making homemade brownies or blueberry muffins and oddly..he picked the muffins. Not like him. I think he just wanted to squish the blueberries in his hands.
And he did.
This is the messiest mess we’ve made in a long time in the kitchen..but he had a blast and he was so proud to show daddy when they were done..and that’s what it’s all about.
Ingredients:
1 1/2 cups all-purpose flour
3/4 cup sugar
1/3 cup milk
1 cup blueberries
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
Topping:
1/2 cup white sugar
1/3 cup white flour
1/4 cup butter, cubed
1 1/2 tsp cinnamon
And then you:
Mix all the dry ingredients…mix all the liquid ingredients…combine them both then gently fold in blueberries
Mix up the crumb topping mixture in a small bowl and distribute evenly on all 12 muffins.
Bake at 400 degrees for 20-25 minutes.
:side note: the hubs ate TONS of these the first day…as seen below….so I know they were deliciouso…but he did say there might have been a few too many berries. But he said it so nicely ..I’m sure so I would make them again very soon.
