This is one of my FAVORITE sneaky mom tricks and one of my favorite Mom on the Go Meals. A super Easy Green Smoothie will fill you up and wake you up with no caffeine crash and without feeling bloated from eating a huge meaty breakfast.

You might remember the scandal a few years ago surrounding Jessica Seinfelds (Jerry’s wife) cookbook Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good Food. The chick that wrote The Sneaky Chef: Simple Strategies for Hiding Healthy Foods in Kids Favorite Meals claimed that Jessica totally ripped her off. Both of the books are fantastic if you have about 4 extra hours a week to puree vegetables and sneak them into your kids food.

Seriously, unless you have alot of extra time don’t bother buying either of these. This was the one recipe that I took away from Jessica’s book and made it my own. And I also make it for the boy all the time. As long as your kids don’t see you actually put the spinach in..THEY WILL NEVER KNOW it’s in there. The banana cuts the spinach taste and the blueberries turn the whole smoothie a lovely shade of purple.

Easy Green Smoothie Recipe

1 big handful spinach

1 banana

1/2 cup frozen blueberries

1 cup water

1 cup ice cubes

1 scoop Whey Protein Powder

Mix, drink and feel great. This is such an energizing breakfast and a great afternoon pick-me up that it makes me want to want dabble more into raw foods. The rest of my family will never go there of course, and I don’t think I would ever want to completely give up cooked food, but you really can feel the difference when you eat a lot of raw veggies and fruit. This is my most absolute and best best favorite recipe for breakfast on the go. I am a big believer in eating breakfast. Not a huge breakfast, and it has to be healthy, light, filling and energizing. A tall order. It’s easy to have a great breaky at home but when you are a super busy (super) mom you rarely have time to coerce your picky kids into eating at least half of a frozen waffle before they leave for school much less make your self a decent meal.

So instead of eating a processed sugary granola bar or a sugar filled bowl of cereal make these Turkey Breakfast Muffins Sunday night and pop one in the micro every morning for about 40 seconds and you have a perfectly portable completely balanced and DELICIOUS breakfast.

Turkey Breakfast Muffins

Ingredients:

1 pound ground turkey sausage ****

1 egg

1 cup flour

1 cup whole wheat flour

2 tsp baking powder

Italian Seasoning to taste

1 tsp baking soda

1/4 cup sunflower seeds

1 cup milk

2 tbsp oil

And then you:

Mix all the dry ingredients together in one bowl. Crack the egg and mix well.

Add egg to ground turkey then combine turkey to flour mixture. Mix in sunflower seeds

Pour batter into 12 muffin tins.

Bake at 400 degrees for 20-25 minutes

****I have only ever made this recipe with precooked turkey sausage. The kind that only has to be heated in the microwave so if you are using raw ground turkey your cooking time may be longer. Or you could precook the ground turkey which is probably the best idea.

:sidenote: I use two cups of whole wheat flour because I prefer the taste and I also used water instead of milk. For the oil I used two tbsps of spray olive oil.
