Real Mom Chicken Sausage Paella

This recipe came to life after having a delicious lunch at a fabulous Cuban restaurant. Like all my recipes, this is “dumbed down” version..or what I like to call a Real Mom Recipe.

Some of you may actually have a special paella pan or maybe even a cast iron skillet..but I’m a stainless steel girl and I have no room in my small kitchen for extra pans. So this recipe was cooked in two stainless pans and of course I used my rice steamer for quicker results.

I’m all about the easy.

Ingredients:

Two servings of chicken sausage

1 Pack Chicken Tenders or Breasts

Pre-packaged Saffron Rice

Onion

1 Can Green Peas

1 Pack Sliced Mushrooms

Optional – Black Olives, Red and Green Peppers

Paprika and Cumin, Salt and Pepper

And Then You:

Cook your pre-packaged rice. I threw mine in my small rice steamer and it was done by the time I had the chicken and sausage cooked. But you can cook on the stove top if you are feeling saucy.

Cook the onions and mushrooms (and peppers if you are using) in a little bit of olive until veggies are soft  then add the chicken sausage and brown. In a different pan cook the chicken tenders in a little bit of olive oil and season with paprika, cumin, salt and pepper.

By now your rice should be done or close to. Once all these ingredients are done throw them all together in the biggest pan and add the peas and black olives.

That’s it. It’s that easy to make an at-home Cuban dish that your family will love.

Notes On This Recipe: Can be made with any meat or seafood. I am sure that the chicken sausage is what made my version taste so good…I just bought some random brand at the grocery store that was low in fat.

As with all the recipes I’ll post on this site…I’ll give it my patented Four Year Old Picky Eater Score. I am trying to expand my toddlers picking eating habits and slowly adding new, better tasting foods to his repertoire and I’m glad to say this made the cut.

I did have to make him a special bowl before I mixed everything up that just contained rice, sausage and chicken but he ate it!
