I told you yesterday that the boy is seriously stoked that there is a new holiday that he didn’t know about. So in addition to the chocolate dipped graham crackers and fortune cookies we made yesterday…today we did this.

There’s something I haven’t told ya’ll yet. I have a may-jor thing for cookie sandwich’s. Ever since the day way back in 1986 that I had my first Double Doozie from the brand new Great American Cookie Company at my local mall. It’s hilarious looking back now that tiny cookie store front was so exciting..so fresh. Yeah kids..that’s how bad mall’s sucked in the 80′s. Ya’ll don’t know how good you have it now.

I loved the icing stuffed cookies back then and I love them now. I made the hubs drive 30 minutes away twice a week to Harry’s Farmers Market to get me fresh cookie sands from their glorious bakery. They came in a box of two. And I ate them both. In one sitting. Yeah. I was sexy when I was pregnant people. Scarfing down giant sized double doozies like the cookie monster.

So my love for them continues today and every time we make cookies and we have icing in the house I have to make a few. And yeah me! Today I only ate half of one.

We used a sugar cookie box mix and a few tubes of cookie icing. It was messy. It was chaos. It was fattening and delicious.

These Lemon Zucchini cookies that Melissa Nibbles made look way healthier and this is really what you should be making this week. Not going down the hole with me in my doozie addiction.

I had fun telling the boy about St. Patrick’s Day this week. He was absolutely overjoyed to find out that there was another holiday that he didn’t know about. His excitement dwindle a bit when he found out there were no presents involved, but then when I got out the fortune cookies he got happy again.

My little monster LOVES fortune cookies. Even before he could read he would take mommy and daddy’s fortunes at restaurants and make up stuff. It was cute and we laughed. And then he would eat everyone’s cookies. Which is cute too..but I really love them too so it kind of sucks. But you sacrifice for your kids.

Here is how we spent the afternoon yesterday. I omitted the entire-hand-in-the-chocolate-bowl-meltdown-pictures so you would all think it was a peaceful and memory making Saturday.

ingredients

We used:

1 box of store bought fortune cookies

1 package of semi-sweet chocolate chips

8 graham crackers

green spinkles

And then we:

Melted the chips in a microwave safe bowl ..bout one minute and stir well

Put the sprinkles on a plate

Ideally you would have parchment paper, but that’s not something I keep in my house all the time so we used aluminum foil sprayed with cooking oil

Dip half of the fortune cookie in the chocolate and then sprinkles. Put on the foil to harden.

Repeat with graham crackers

:notes: Now that I see that the green sprinkles don’t show so well on the chocolate, if I makeĀ  this again I’ll use white chocolate
